This is wonderful option for a lean meat. Pork is often thought of as a fatty cut of meat. In fact, pork tenderloin has close to the same fat content as per ounce of chicken breast!! This recipe has a ton of flavor! It is great to eat with a just a side of vegetables or if you’re having a carb, over rice. For a balanced meal, serve with 3/4 Cup of brown rice.
Serving Size: 4oz / 1/2 Cup / 2 pieces
1 whole pork tenderloin, cut into 8 crosswise pieces
2 tsp lemon pepper
1/2 Tbsp butter
2 Tbsp lemon juice
2 Tbsp Worcestershire sauce
2 tsp Dijon-style mustard
1 tablespoon dried parsley
- Place each piece of tenderloin between 2 pieces of plastic wrap. Flatten slightly with heel of hand. Sprinkle surfaces of pork with lemon pepper.
- Heat butter in heavy nonstick skillet; brown pork evenly, about 3-4 minutes on each side. Remove to serving platter, keep warm.
- Add lemon juice, Worcestershire sauce and mustard to skillet. Cook, stirring with pan juices, until heated through. Pour sauce over medallions, sprinkle with parsley and serve.
